Bacon and Mushroom Arrabbiata with Lentil Penne Pasta

Chillis add heat and lentils add protein to this fiery penne pasta arrabbiata, it will keep your immune system boosted for days!

I thoroughly enjoy any Italian dish, especially an arrabbiata with its tomato base sauce. The word “arrabbiata” literally means “angry” in Italian, and it refers to the heat in the sauce. Depending on how many chillis you add to an arrabbiata sauce, it can be mild or extremely angry!

The standard recipe is for a fairly straightforward chilli and tomato sauce. However, I find the traditional recipe lacking which is why I have created this version which adds bacon and mushroom.

A simple yet delectable Italian dish that can be enjoyed by the whole family.

Ingredients

  • 2 onions

  • 1 tin tomatoes

  • 250 g brown mushrooms (any mushrooms will do)

  • 10 g green chillis (or as per your preference)

  • 2 sachets tomato paste

  • 2 packs of back bacon

  • 250 g box red lentil penne (1 box)

  • olive oil (a splash)

  • 2 tablespoons garlic

  • 1 teaspoon sugar

  • Parmesan cheese (to serve)

  • 250 ml sour cream (optional, to serve)

Method

  • Preparation
  • Chop the onions, chillis and mushrooms.
  • For the Arrabiata Sauce
  • Heat saucepan and add olive oil and garlic.
  • Once hot, add onions and bacon and fry until cooked.
  • Add mushrooms and tomatoes until softened and the juices release.
  • Add chilli, salt, pepper and herbs.
  • Lastly add tomato paste and sugar and cook through.
  • For the Lentil Penne Pasta
  • Add water to a medium to large pot and bring to a boil.
  • Add a dash of olive oil and a pinch of salt.
  • Add in the pasta and cook for 7-9 minutes or until al dente.
  • To serve
  • Dish up pasta and sauce.
  • Add parmesan or sour cream as preferred.
