Whether you’re following a keto diet for you health or weightloss, you still want to enjoy pastry every now and then. The great thing about this simple keto filo pastry is that there’s no flour and it’s as flaky and beautiful as you would expect. Phyllo (or filo) pastry is a Greek pastry that’s paper-thin and actually means “leaf”, and is different to puff pastry which is layered with butter.

This protein-packed filo pastry is still perfect for your desserts like strudel or snacks like samoosas and spring rolls. The recipe in the video below is super simple and Mel provides various options for how you can make the pastry as well as use it in different scenarios. Enjoy the process and flavour.
