If you enjoy a zesty dessert, you will fall in love with this lemon cheesecake. Loaded with a lip-smackingly delicious lemony flavour combined with a rich, creamy texture, this dessert is just perfect.

The best part is that this lemon cheesecake requires absolutely no baking. Simply whip it together in 30 minutes and pop it into the fridge to get chilled and you are good to go.

Ingredients

  • 250 ml cream cheese

  • 350 ml cream

  • 250 ml condensed milk

  • 1 packet of Tennis biscuits

  • 100 ml butter, melted

  • 90 ml lemon juice

  • zest of 1 lemon

Method

  • Crust
  • Grease a pie dish of your choice
  • Mix the melted butter and crushed biscuits then add to the pie dish and press firmly into your dish.
  • Refrigerate while you mix the filling.
  • Beat the cream until a firm consistency. Set aside.
  • Mix the condensed milk and lemon juice, until fluffy and creamy. Add half of the zest.
  • Fold the cream cheese into the mixture and pour over your chilled crust.
  • Garnish with the rest of your zest.
