Do you have a bit more time to make breakfast this week? Do you enjoy feeding your family nutritious and delicious breakfast meals that will keep them fed all day? We love one-pot meals and this Fully-Loaded Breakfast Mushroom Casserole with feta cheese is honestly the best way to do it. You can’t really have a great breakfast without eggs, not just because they’re good for you but are just so tasty. Just make sure you have enough eggs to feed everybody.

When you need some more colour, add red peppers along with the green. They add some great sweetness and a bit of texture. Mushrooms add to the savoury flavours and meatiness of the breakfast which everybody can enjoy. Breakfast needs to include a good amount of protein for daily energy and this Fully-Loaded Breakfast Mushroom Casserole has it in spades. If you’re feeling even more adventurous, add some jalapeño chillies. They aren’t overly hot but add more flavour and some spice.

Fully-Loaded Breakfast Mushroom Casserole Recipe

Ingredients

  • 250 g mushrooms, sliced

  • 1 large green pepper, coarsely chopped

  • 1-2 onions, diced

  • 1 cup crumbled feta (or more, to taste)

  • 18 eggs

  • your choice of seasoning

  • ground black pepper

  • olive oil

Method

  • Preheat the oven to 190°C.
  • Spray 10 x 14 cm glass casserole dish with non-stick spray (a slightly smaller dish than this will work. If your dish is much larger, just increase the ingredients slightly).
  • Heat a non-stick frying pan, add a small amount of olive oil and sauté the mushrooms for 4 – 5 minutes, until softened and partly cooked.
  • Spread the mushrooms in the bottom of the prepared casserole dish.
  • Add more olive oil to the frying pan if needed and sauté the green peppers until softened and partly cooked.
  • Layer the peppers over the mushrooms.
  • Crumble feta cheese on top of the mushroom-pepper mixture.
  • Beat the eggs with your choice of seasoning and ground black pepper. (Don’t add salt because feta cheese is salty enough.)
  • Bake for about 45 minutes, or until the casserole is firmly set and the top is slightly browned.
