Make Your Own Delicious Chicken Cakes with a Limited Budget

With everyone going through financial difficulties during lockdown, finding new ways to create fantastic homemade meals on a budget is becoming a reality.

Homemade chicken cakes are super simple, packed full of protein, versatile and healthy.

Our bodies need protein

Consuming protein on a daily basis is extremely important. Protein keeps your cells in good order and should be part of everyone’s diet. Chicken is one of the lean meats that contains healthy protein, especially the breast part of the bird.

Serving suggestions

The kids will love these with some creamy mashed potatoes or hot chips. For us adults, serve with a lovely green salad, or low-fat baked potatoes or broccoli.

These kid-friendly homemade chicken cakes are a great alternative to fishcakes and can be used on a burger roll with lettuce, tomato, onions, cheese, and mayonnaise to make a really healthy, filling burger.

Homemade chicken cakes are super simple, packed full of protein, versatile and healthy.

Ingredients

  • 2 boiled and shredded chicken breasts (wash before placing in the pot)

  • 2 slices of crispy toast

  • 2 eggs

  • 1 cup 1 of grated cheddar cheese (optional)

  • 1 onion, chopped and fried

  • 1 tsp 1 mixed herbs

  • flour for coating

  • salt and pepper to taste

  • oil for frying

Method

  • Boil chicken breast in water. Let it cool, debone and shred well (you do not need a blender – you can do it by pulling the chicken apart with your clean hands). Place the shredded chicken into a mixing bowl.

  • Chop up one medium-sized onion and fry till golden brown. Add the onion to the shredded chicken.

  • Toast two slices of bread till crispy, let cool and crush it, then add to your mixing bowl. Add the rest of the ingredients to your mixing bowl, except the flour, and combine well.

  • Heat oil in a medium-sized pan (you only need a few tablespoons).

  • Take the chicken mixture and make into tennis ball-sized balls, flatten into burger-shapes, coat each chicken cake in flour and fry on each side until golden brown. You have the option to make the mixture into chicken meatballs if you so wish.

  • Remember, the chicken is already cooked, so four to five minutes per side is sufficient.
