Zesty beetroot salad: A braai side that everybody can enjoy this winter

Bright, healthy and absolutely delicious, our healthy and zesty beetroot salad is a great addition to any Father’s Day braai this weekend.

It’s still nice and bright outside, so South Africans are going to host a braai on Father’s Day. You need sides to go with the feast of great cooked meats, snacks and drinks. We all know the classic beetroot salad, but our twist on a classic will get your mouth watering again. This zesty beetroot salad includes feta cheese, eggs, olives and red onions, adding to the flavours and nutrients.

The humble beetroot is healthier than you think. It contains nitrates which help athletic performance by improving oxygen uptake and transport to the brain and muscles. It’s also packed with fibre for good digestion and is important for the immune system. This great salad also improves the texture along with the different flavours. Everybody’s bringing sides and this classic is going to make some people at the table very happy.

Ingredients

  • Salad
  • 1 kg 1 beetroot, cooked and diced

  • 4 4 boiled eggs, sliced

  • 1 packet 1 olives

  • diced feta to taste

  • 1 1 red onion, thinly sliced

  • chopped chives and/or parsley

  • salt and pepper to taste

  • Dressing
  • olive oil

  • balsamic vinegar

  • Dijon mustard

  • lemon juice

Method

  • Mix all the salad ingredients together.
  • Mix the dressing ingredients together to taste and toss through the finished salad.
  • Season and serve.
