Mushrooms, spinach and eggs are full of great nutrients like protein, calcium, iron, zinc and healthy fats. Baking the ingredients makes sure that you’re cooking the ingredients in a healthy way while adding some crunch. Each serving is only 235 calories which means that your breakfast will be tasty and fit your daily calorie intake. If you like to add something else, a few chilli flakes or freshly diced chillies won’t add much more in calories but adds a great deal of flavour.

Ingredients

  • 2 medium 2 Eggs

  • 1 tsp 1 Extra virgin olive oil

  • 2 cups 2 Raw spinach leaves

  • ½ cup ½ Raw mushrooms

  • ½ clove ½ Garlic

  • 1 medium 1 Tomato

Method

  • Heat your oven to 200°C (390°F). Put the mushrooms and tomatoes in an ovenproof dish.
  • Add the garlic and drizzle with oil. Bake for 10 minutes.
  • Meanwhile, put the spinach into a large colander, and run it under boiling water to wilt it. Allow to cool, and then squeeze out any excess water.
  • Add the wilted spinach to the dish with the mushrooms. Make a little gap between the vegetables and crack the eggs into the dish.
  • Return to the oven and cook for a further 8-10 minutes or until the egg is cooked to your liking.
