With the new year in full swing, you want to eat healthier but still enjoy your food too. If you’re following a vegan or vegetarian diet, it can be even harder to find some good ideas. This one-pot vegetable pasta is an easy and versatile recipe that you can use to get a bit creative. With your choice of pasta and whatever you’ve got in your fridge or pantry, you can still make a healthy, hearty and tasty dinner for your family.

One-pot vegetable pasta suggestions

You can use any pasta you have in the kitchen and if you use macaroni or penne, the pasta holds onto more of that tasty sauce. For better tomato texture, use canned whole tomatoes and then crush them. They taste better and add to the texture. When your pasta is ready; in a small pan, add a serving of pasta and your vegetable sauce and add a quarter cup of pasta water and mix together until the sauce is thickened.

A quick and easy one-pot veggie pasta recipe that can be adapted to your personal preference.

Ingredients – PASTA

  • 1 packet 1 pasta of your choice

  • For the vegetable sauce
  • 3 cups 3 cabbage, chopped

  • 3 3 carrots, chopped

  • 1 1 onion, chopped

  • 3 cloves 3 garlic, chopped

  • 2 tbsp 2 tomato paste

  • 2 ½ cups 2 ½ vegetable stock

  • 1 can 1 tomatoes of your choice

  • herbs and spices

  • juice of half a lemon

  • 1 tbsp 1 apple cider

  • 1 tbsp 1 crushed ginger

  • black pepper

Method

  • In a large pot, add in all your vegetables and stock, cook until almost tender.
  • Stir in garlic, spices and tomato paste.
  • Add canned whole tomatoes and break them up a bit with a spoon, or leave as it is if you want it chunky.
  • Add in the herbs.
  • Season and then simmer the sauce and vegetables until reduced slightly, somewhere between 10 to 15 minutes
  • Add in the pasta and cook until the pasta is al dente. If there is not enough liquid to cover the pasta, add boiling water until they are covered. Cook the pasta until firm but no longer crunchy. Save some pasta water.
