Cake makes the world go round, doesn’t it? There are thousands of different cake and cupcake variations and many of them are delicious. The two main flavours you will always find is chocolate and vanilla. These Vanilla Cupcakes with vanilla cream cheese icing will blow your mind. Feel like a real pastry chef when you bake and decorate these beauties. Who knows, you might become a baker for real.

This recipe is incredibly easy to make and comes out perfect every time. The cake tastes sweet like vanilla while being light and fluffy. The cream cheese icing on top is buttery and sweet, creating the perfect accompaniment to the cake. These Vanilla Cupcakes are perfect for birthday parties, general celebrations and if you can decorate them right, even go very well as a wedding treat. You can decorate these beauties any way you want and there will be 12 cupcakes to work with and serve.

Ingredients

  • Vanilla Cupcakes
  • 150 g sugar

  • 4 eggs

  • 250 ml milk

  • 112 g butter

  • 15 ml vanilla essence

  • 25 g baking powder

  • 325 g cake flour

  • 3 g salt

  • Cream Cheese Icing
  • 60 g butter

  • 150 g cream cheese

  • 5 ml vanilla essence

  • 250 g icing sugar

Method

  • Vanilla Cupcakes
  • Sift the cake flour, baking powder and salt.
  • Whisk the eggs and sugar until creamy. 
  • Heat buttermilk and vanilla essence until melted.
  • Take butter mixture and add to egg mixture then fold in the mixture be careful not to over mix.
  • Spoon into 12 cupcake moulds and bake for 15 to 20 minutes.
  • Remove from heat to cool down.
  • Cream Cheese Icing
  • Place butter, cream cheese, vanilla essence and sift the icing sugar into a bowl of a food processor and process until smooth.
  • In a piping bag put cream cheese icing, pipe it onto the cupcakes, and serve.
