Some recipes just never get old. Crispy, cheesy tuna stuffed potatoes are one of them. It brings a delightful change to the menu and will easily become a family favourite. Hardly any planning is needed for this dish as its ingredients will already be available in most home kitchens. Another plus is that it is pocket friendly without compromising on taste.

Did you know that apart from being a source of carbohydrates, potatoes are also rich in Vitamin C and Vitamin B? They also contain minerals such as potassium, magnesium and iron. So, not only is this comfort food at its best, but it’s also rich in vitamins and minerals vital to keep us healthy and energetic.

Serve crispy, cheesy tuna stuffed potatoes as an appetizer or as a garnish of a main course. They are perfect to serve with baked chicken or sirloin.

Ingredients

  • 3 tins of tuna in brine

  • 1 can of sweetcorn, drained

  • 3 tablespoons cream cheese

  • 3 tablespoons mayonnaise

  • seasoning

  • 5 medium potatoes

  • 1 cup grated cheese

Method

  • Preheat oven to 180°F / 82,222°C.
  • Prick the potatoes with a fork, rub with olive oil and coarse salt.
  • Place the potatoes in preheated oven for 40 minutes or until golden brown.
  • Add all the remaining ingredients together in a bowl and garnish.
  • When the potatoes are brown and crispy, remove from the oven, slice them halfway down and press from the side with a paper towel to make them squishy.
  • Putt a little cheese inside the potatoes, then spoon in the tuna mix and top up with cheese.
  • Garnish with coriander.

Notes

  • *Optional: before garnishing, you can grill the potatoes a little more in the oven until the cheese has melted.
