When it comes to summer, it’s tougher to eat big meals and snacking is often how we enjoy our food during the day. When going on road trips, you need some road trip snacks too. Whether you need holiday snacks or a weekend braai starter, you should try this savoury tuna fridge tart salad. When you’re used to pate and cheese on crackers, you might like these unconventional recipe to enjoy with all of your friends and family.

Savoury tuna fridge tart tips

There’s no mess when eating these as the triangles already have your topping ready. The tuna can be your preferred version and you can make your own tuna mayo variations. When using mayo, any additional spiciness like hot sauce or chiies will be mellowed out. These snacks are great for the starter table at parties or packed for road trips and beach days. They’re also healthy thanks to the protein in the tuna and some carbs in the crackers.

Savoury tuna fridge tart recipe

Ingredients

  • 1 packet 1 cream crackers

  • 2 tins 2 tuna

  • 150 g 150 gherkins

  • 4 tbsp 4 mayonaisse

  • 1 block 1 feta cheese, can be replaced with cream cheese or cottage cheese

  • 1 cube 1 chicken stock, one block dissolved in hot water

  • 1 packet 1 lemon jelly, or use gelatine with splash of lemon

  • 200 ml 200 hot water, for jelly

  • chopped chives, optional

Method

  • Dissolve jelly in hot water and add chicken stock.
  • Cool the jelly mixture.
  • Drain the 2 tins tuna, mix all the ingredients in a bowl.
  • When the jelly mix has cooled down, add it to tuna mixture.
  • Place in the fridge for 20 minutes (just to semi-set it).
  • On a sheet of foil, arrange the cream crackers in 3 rows, every row 4 to 5 biscuits.
  • Add the tuna mix on the middle row, and carefully lift the sides to form a triangle and close the foil tightly.
  • Place in freezer overnight.
  • Best to take out freezer at least an hour before serving, in the winter, summer 30 minutes. Serve with slice lemon and side salad.
