The great thing about lunch time on the weekend is that you’ve got more time to cook something amazing. However, amazing doesn’t mean complicated and if you want flavour, Mexican food is definitely the way to go. These cheesy chicken quesadillas are fully loaded with flavour and your favourite ingredients, all between some perfectly toasted tortillas. They are also great for parties with guests who can build their own and enjoy each bite.

Cheesy chicken quesadillas tips

The chicken and pepper filling is ready in 10-15 minutes and you can add some fresh chillies if you want more spice. The recipe amounts are easily adjustable and if you have a build-your-own party, cook everything separately. You can also make some guacamole for dipping on the side and make sure you have cream cheese ready too. You can make large quesadillas too by filling one whole tortilla and topping it with another before flipping it.

Delectable quesadillas filled with cheese and chicken. An easy light snack or lunch.

Ingredients

  • For the seasoning
  • 1 tsp 1 onion powder

  • 1 tsp 1 origanum

  • 1 tsp 1 salt

  • 2 tsp 2 cumin

  • 2 tsp 2 paprika

  • 1⁄2 tsp 1⁄2 black pepper

  • 1⁄2 tsp 1⁄2 cayenne pepper

  • For the filling
  • 4 4 chicken fillets, cut into strips

  • 1 1 onion, finely chopped

  • 1 1 red pepper, finely chopped

  • 2 2 garlic cloves, minced

  • Seasoning mix

  • Quesadilla extras
  • 6 6 flour tortillas (or wraps)

  • 1⁄2 cup 1⁄2 cheddar cheese

  • 1⁄2 cup 1⁄2 mozzarella cheese

Method

  • For the seasoning
  • Add all the ingredients to a small bowl and mix well. Set aside
  • For the filling
  • Heat a large frying pan. Add a drizzle of olive oil to the pan. Add onion, garlic and red pepper and cook for 2 minutes.
  • Add the chicken strips and spice mix and mix well. Cook for 3 minutes until the chicken is brown, Lower the heat and cook the chicken for another 3 minutes until cooked through.
  • Remove the filling from the pan and set aside.
  • Assembling the quesadillas
  • Heat a large pan, medium to low heat, with no oil. Place 1 tortilla in the pan. Sprinkle some cheddar cheese on one half of the tortilla.
  • Spoon chicken filling on top of the cheese. Add a bit of mozzarella cheese.
  • Fold the tortilla in half and cook for 1 minute. Flip the tortilla over to brown the bottom side.
  • Remove the pan and cut the tortilla in half.
  • Repeat with the remaining tortillas.
  • Serve with guacamole and sour cream.
