We’re always on the lookout for food that’s not only tasty but healthy and cooked in no time. Asian-inspired food is easy to make and contains simple ingredients which contain tons of flavour and nutrients. Our Thai Chicken recipe brings you all of these things in one 15 minute recipe.

You will be happy to know that this Thai Chicken recipe uses the most basic ingredients. They include skinless chicken breast, bok choy, chives, red onion and rice noodles. All of these combined adds that all-important protein, carbs, folate, Vitamins A & B, while only consisting of 285 calories per bowl.

Ingredients

  • 90 g 90 Chicken breast

  • 2 tsp 2 Extra virgin olive oil

  • ½ cup ½ Water

  • 1 medium 1 Tomato, diced

  • 15 g 15 Rice noodles

  • 3 tbsp 3 Red onion, chopped

  • 2 cups 2 Bok choy, chopped

  • 2 tbsp 2 Lime juice

  • 1 tbsp 1 Chives, chopped fine

Method

  • Heat a pan over high heat. Add the oil, onion and tomato, cook until soft.
  • Add the chicken and sauté for 5 minutes.
  • Add bok choy and cook for 2 minutes. Add the noodles, water, chives and lime juice. Cook for another 2 minutes until the noodles are soft.
  • Serve warm.
