Teatime scones need no introduction to those of us who love to take a teatime break. These little buttery snacks are simply delightful with some preserves, cream and whatever other garnish you love to add.

This recipe is quick and easy. Within 30 minutes you can have your teatime scones fresh out of the oven spreading their seducing fragrance throughout your kitchen and home.

When mixing the dry and wet ingredients to form the dough, make sure you use a light hand to combine the ingredients. No matter how tempting, do not knead the dough. When you handle the dough too much, the scones will not have the light, crumbly texture we all love. Instead, you will end up with tough and chewy scones. So, make sure you handle the scones dough as little as possible.

Ingredients

  • 1 kg 1 cake flour

  • 200 g 200 butter

  • 15 ml 15 baking powder

  • 150 g 150 sugar

  • 6 6 eggs

  • 300 ml 300 milk

  • 30 ml 30 lemon juice

  • 1 pinch 1 of salt

Method

  • Rub the butter into the flour until it resembles bread crumbs.
  • Mix in all other ingredients.
  • Mix the milk, lemon juice and eggs together and slowly pour into the dry ingredients.
  • Mix the dough lightly until combined but do not knead the dough.
  • Cut into shapes and brush with egg wash/ milk and bake at 180˚C for 10 – 15 minutes.
  • You may serve it with whipped cream and fresh fruit.
