Woth so many great cuisines in the world you can often forget how great it is when you combine them If you have a big event coming up or just want to cook something tasty for your family, tacos are a great way to go. However, you wanted to combine some great foods, didn’t you? These soft and tasty mushroom tacos combines this great Mexican flatbread with Asian flavours.

Tips for your tasty mushroom tacos

The recipe doesn’t just have some great Mexican soft tacos, but popular fillings like avocado, coriander and peppers. The Asian ingredients include the Korean barbecue marinade which you can get at the grocery store. However, you can also get your sauces from the source. The brown or white mushrooms add a great meaty texture. You can get creative and add some chilies or any other vegetables you want to.

Ingredients

  • 500 g Button or Portabellini mushrooms (cleaned and threaded onto wooden skewers that have been soaked in water for 30 minutes)

  • OR
  • 4 large Fresh Portobello (big brown) mushrooms

  • 3 tbsp Korean barbecue marinade (available at Woolworths), or other barbecue marinade of your choice

  • 1 Baby cabbage, finely shredded

  • 1 Carrot, grated

  • ¼ Red onion, finely sliced

  • 1 tsp Wasabi

  • 6 tbsp High-quality mayonnaise

  • 4 Soft tacos (any flat-bread will work)

  • ½ Avocado, sliced

  • 1 handful Coriander leaves

  • Lemon wedges, grilled on the braai until caramelized, about 5 minutes

Method

  • Brush the mushrooms with the barbecue marinade and place straight onto a medium-hot braai, basting with more barbecue sauce as you go, and turning until mushrooms are cooked through, about 10 minutes.
  • Meanwhile, combine the cabbage, carrot, onion, wasabi and mayonnaise.
  • Toast soft tacos on the braai, a couple of seconds on each side. 4 Remove mushrooms from the braai, slice into thick strips, and divide between tacos. Top with slaw, avocado and coriander. Serve immediately with grilled lemon wedges.
