One of the best things to do, especially when you’ve got leftover rice is to make egg-fried rice. This pineapple fried rice with prawns is one of those recipes. It’s fresh, a little bit spicy and takes almost no time at all to prepare for a quick lunch or dinner.

For the best rice results, make sure it’s a few days old, because this will help the rice absorb more of the sauce. The recipe uses all kinds of odds and ends from the kitchen and it will probably always be changing. When making fried rice, ensure that all of your ingredients are prepared and ready in the order you’ll be using them, especially when cooking with a hot wok. With fried rice, never stop mixing and giving everything a chance to cook quickly.

A dish to titillate your tastebuds. This stir fry is full of flavour and zest.

Ingredients

  • 2 cups 2 cooked jasmine rice

  • 1 1 whole pineapple

  • 2 tbsp 2 fish sauce

  • 4 tbsp 4 soy sauce

  • 2 tsp 2 sugar

  • 1 tbsp 1 curry powder

  • 2 tbsp 2 vegetable oil

  • 1 1 red onion, finely chopped

  • 2 tbsp 2 garlic, minced

  • 2 tsp 2 ginger, minced

  • 800 g 800 prawns, peeled and deveined

  • 1 1 red pepper, diced

  • 1 cup 1 green peas, fresh or frozen

  • 1⁄2 cup 1⁄2 cashew nuts

  • 1⁄2 cup 1⁄2 raisins

  • salt and pepper, to taste

  • coriander, to garnish

  • fresh chillies, optional

Method

  • Cut the pineapple in half lengthwise and carve out the insides.
  • Carefully cut out the core, to create a hollow bowl. Dice the removed pineapple flesh into pieces.
  • In a small bowl mix together fish sauce, soy sauce, sugar, and curry powder.
  • Heat a wok or large frying pan over high heat.
  • Add the vegetable oil, once hot add the onions, ginger, and garlic, stir-fry for 1 minutes.
  • Add the red pepper and peas, cook 1 minute.
  • Add the prawns and cook until they turn pink, about 2 minutes.
  • Add the rice and stir. Cook for 2 minutes.
  • Add the fish sauce mixture and stir.
  • Add the diced pineapple, raisins and cashew nuts. Mix together.
  • Remove from the heat and scoop the fried rice into the pineapple bowls. Season with salt and pepper.
  • Garnish with coriander and fresh chillies.
