The summer days are still warm and one of our favourite refreshing beverages is a gin and tonic. Also, adults are usually the only ones who like cheesecake as kids often don’t get why it’s so delicious. This great gin and tonic baked cheesecake combines these two favourites to make something fun and delicious. The botanicals in the gin just give an idea of a different flavour while the tonic actually helps keep the filling light.

Gin and tonic baked cheesecake tips

When it comes to pie and cake crusts, Tennis Biscuits and butter is often the way to go for South Africans. They crumble well and with the already buttery flavour, also has a bit of coconut in them too. The cheesecake is ready when the top cracks a bit and let it cool in the oven with the door open slightly. You can enjoy this deliciousness with a bit of cream or ice cream and make sure to also have a cocktail with a slice if you’re feeling the mood.
