Do you have a fancy party to prepare for or catering for a finger-food feast on the weekend? Your desserts should definitely be good-looking as well as sweet and tasty. These sweet strawberry tarts are great for these events and with the festive season drawing near, look the part even more. You can make them for dinner parties or as part of your snack and dessert table. They can be made a day ahead of time too, cutting down on day-of prep time.

Sweet strawberry tarts tips

Short crust pastry is simple to put together but adding too much water can make them shrink. You should also refrigerate the pastry so that they don’t shrink when baked. The pastry is filled with whipped cream that you can pipe into the pastries. You can also make the strawberries sweeter by adding some sugar and letting them rest to release their sugars. Make enough because these treats will fly off the table.

Ingredients

  • 120 g plain flour

  • ¼ tsp salt

  • 80 g butter

  • 8-10 g castor sugar

  • For the filling
  • 225 g fresh strawberries

  • 125 ml double cream

  • 3 tbsp redcurrant jelly

Method

  • Make rich short crust pastry
  • Combine pastry ingredients and turn into shaggy dough.
  • Roll it out on a lightly floured table. Cut nine circles with a 5cm fluted cutter. Use to line patty tins. Prick and then chill for 15 minutes.
  • Line each with grease-proof paper and baking beans, or foil.
  • Bake the cases in a 190°C oven for about 15 minutes. Remove paper and beans, or foil, for last 5 minutes. Cool on a wire tray.
  • Whip cream until it forms soft peaks and divide it between the pastry cases. Arrange strawberries on top.
  • Melt the redcurrant jelly over a low heat in a small pan. Heat gently, stirring occasionally, until smooth.
  • Spoon glaze over tartlets.
