It’s that time again; a time to bring out the big guns and make the best game day snack you and your friends have ever had. Meaty nachos are the all-time best fully-loaded snack that you can present to your friends before hearing cheers for you instead of the big game on TV. You’re going to need to make these sweet potato nachos with black beans, chicken, bacon, guacamole and the creamiest cheese sauce on the face of the earth.

Sweet potato nachos suggestions

Going against the grain with this one, your sweet potato chips will be crispy and delicious, especially if you’ve sliced them nice and thin with a mandoline (beware of your fingers). The chicken, bacon and beans are the meaty heart of this platter which is sandwiched between the potato chips and absolutely incredible cheese sauce. Make as much as you can because this is one full meal and to be fun, use big oven trays lined with foil and go crazy with the presentation. Guacamole and cream cheese go on the side and add some jalapeño chilies on the side!

There’s one party dish that stands above all others, nachos! Try our Sweet Potato Nachos with Black Beans and Bacon recipe today.


  • 6 large 6 sweet potatoes

  • 250 ml 250 olive oil (Truffle Oil is preferred)

  • salt

  • 2 2 chicken breasts

  • 1 pack 1 bacon

  • 1 tin 1 black Beans (drained

  • 1 1 lemon

  • fresh garlic

  • 4 tbsp 4 chicken spice (Robertsons Fiery Mexican Spice is wonderful, but any chicken-related spice will work)

  • 2 2 avocados

  • ½ ½ onion, sliced

  • 250 ml 250 sour cream

  • Salsa (Suggestion: Woolworths Peppadew Piquanté Pepper Salsa – Medium)

  • 1 tbsp 1 flour

  • 35 g 35 butter

  • 350 ml 350 milk

  • 3 sprigs 3 sage

  • 1 roll 1 Fairview Sundried Tomato Goats Cheese

  • 1 cup 1 cheddar cheese, grated


  • For the nacho chips
  • Preheat the oven to 180°C.
  • Rinse and slice the sweet potatoes into 2-3mm slices. (use a mandoline slicer)
  • In a mixing bowl pour in 150 ml olive oil and mix in the sweet potato slices. Grind in the salt and make sure all the slices are coated with salt and oil.
  • Place into a baking tray and place in the oven for 30-45 minutes. (Depending on how crispy you want them). Make sure to check in on them after 15-20 minutes and give them a good shake or flip. (Air fryer takes 20 minutes)
  • For the meat and marinade
  • Dice the bacon and cut the chicken into thin strips.
  • In a bowl mix 100 ml olive oil and the juice of 1 lemon. Crush the 2 garlic cloves and add into the bowl.
  • Add in the diced bacon and the chicken slices to the marinade and leave to marinate for at least 15 minutes.
  • Once this is done, get a frying pan and place it on the stove on high heat. Add in 10g of butter and the sage and let this fry to create a fragrant sage butter.
  • Once ready add in the bacon and chicken to the pan and fry ¾ of the way before fully cooked before adding the drained tin of black beans into the mix.
  • Add in your favourite spice,
  • Fry for another 10 minutes.
  • For the cheese sauce
  • In a sauce-pot add in the remaining butter until melted.
  • Then add in the flour and stir with a whisk until a paste is formed.
  • Add in milk until the paste becomes a sauce-like texture while continuing to stir the entire time.
  • Add in the grated cheese and the goats-cheese roll (breaking it up with your hands as you add it to the sauce).
  • Continue to stir and add a little more milk if necessary to get a creamy cheese sauce texture.
  • For the guacamole
  • Mash-up the avos into a separate bowl.
  • Add in some fresh lemon juice.
  • Add the diced onion and tomato salsa.
  • Assembly
  • In a serving dish toss in the sweet potato chips.
  • Pour over the meat and beans.
  • Pour over the cheese sauce.
  • Pour the sour cream and salsa into separate bowls.
  • Remember you guacamole and serve.
