A great breakfast doesn’t have to be complicated or time consuming to make!  This overnight sweet croissant breakfast casserole is assembled the night before, covered with juicy mixed berries and sweetened cream cheese, then drizzled with a mouthwatering vanilla  glaze. It seriously tastes like a dream! With pastry from your favourite bakery and those mixed berries that go into your oats, you can enjoy something much better.

Sweet croissant breakfast tips

If you’ve made overnight oats, this is almost the same thing. The cream softens the croissants pieces which is much tastier and decadent than oats. The sweetened cream and mixed berries make this breakfast taste like actual dessert and you can of course serve it as dessert too. For a bit of texture, put one croissant in the oven or air fryer before serving and crumble it over top for some crunch and enjoy with a cup of coffee.

Ingredients

  • 4 large 4 croissants  sliced into  cubes

  • 1 1⁄2 cups 1 1⁄2 mixed berries (raspberries, blackberries, blueberries, etc.)

  • 250 g 250 cream cheese, softened

  • 1 cup 1 milk

  • 1⁄2 cup 1⁄2 granulated sugar

  • 2 large 2 eggs

  • 1 tsp 1 vanilla extract

  • 1 tsp 1 lemon zest

  • For the vanilla glaze
  • 1⁄2 cup 1⁄2 powdered sugar

  • 2-3 tbsp 2-3 heavy cream (or half and half and milk)

  • 1 tsp 1 vanilla extract

  • powdered sugar for dusting (optional but recommended)

Method

  • Grease an 20-20cm baking dish, fill with sliced croissants and mixed berries. Set aside.
  • Add cream cheese to mixing bowl and beat with hand mixer until smooth. Add milk, sugar, eggs, vanilla and lemon zest and beat until combined.
  • Pour mixture over croissants and berries.
  • Cover tightly and refrigerate overnight.
  • Preheat oven to 180°C.
  • Remove baking dish from refrigerator and let sit on the counter.
  • Bake, covered with aluminum foil, for 30 minutes. Remove foil and bake uncovered for 15 minutes, until golden and when a knife inserted in center comes out clean.
  • While casserole is baking, add powdered sugar, heavy cream, and vanilla extract to a small mixing bowl and whisk to combine until smooth and pourable.
  • Drizzle glaze over casserole after it’s finished baking. Serve warm and dust with powdered sugar if desired.
