Have you started gathering your festive season recipes yet? This summer trifle is just the one you need to add some vibrance to Christmas Day. Trifle is a dessert often enjoyed over the festive season. So, having this trifle recipe up your sleeve will add to the festivity lingering in the atmosphere.

Summer trifle is basically a combination of vanilla sponge cake with custard, cream and seasonal fruit. It is a dessert served cold which is just what we need this time of the year. In this recipe, a variety of berries makes for a beautifully colourful, appetising display that will tempt your guests to enjoy more than one serving.

This summer trifle recipe includes berries as the only fruit. However, nothing stops you from adding more fruit according to your taste. You can even remove the berries and replace them with other delicious fruit like kiwi, grapes or wherever your creativity leads you to.

Ingredients

  • Vanilla sponge cake
  • 150 g 150 sugar

  • 250 ml 250 milk

  • 112 g 112 butter

  • 15 ml 15 vanilla

  • 250 g 250 flour

  • 25 g 25 baking powder

  • 3 g 3 salt

  • 4 4 eggs

  • Summer berry trifle
  • 1 1 vanilla sponge cake

  • 1 litre 1 vanilla custard

  • 1 cup 1 cream

  • 2 tablespoons 2 icing sugar

  • fresh berries cut into halves

Method

  • Vanilla sponge cake
  • Preheat the oven to 180°C and grease a baking tray.
  • Whisk the eggs and sugar until the ribbon stage.
  • Heat the butter, vanilla and milk until the butter is melted.
  • Sift the flour, baking powder and salt.
  • Add the butter mixture into the egg mixture and then fold into flour mixture but don’t over mix.
  • Bake until golden brown.
  • Summer berry trifle
  • Cut the vanilla sponge into small, equal-sized cubes and divide between the 13 glasses, pushing them gently in to form a layer.
  • Pour over the vanilla custard to form the next layer.
  • Whip the cream until soft peaks form before whisking in the icing sugar. Spoon this mixture over the custard, top with berries and make the next layer do the same thing until the cup is full.
  • Place in the fridge for 2 minutes and serve.
