When making a wholesome dinner or snack, you want something that’s full of flavour and a bit different. Gem squashes are small pumpkin-type vegetables also known as summer squash. They are buttery and great for stuffing with other ingredients. Our stuffed gem squash with spinach, rice and chillies is a great meal or side that goes perfectly well with a braai. With a bit of spice and cheese, you can make almost anything taste delicious.

If you don’t want to cook the squashes in the microwave, you can also bake them or boil them after being cut in half. One of the old-school ways of enjoying gem squash is with a bit of butter and sugar, and maybe some sweetcorn, but this recipe takes it to a new level. Make sure not to overcook the spinach and add as much chili as you want to. You can also get a bit creative with ingredients and make your own special dinner sides.

Stuffed gem squash with spinach recipe

Ingredients

  • gem squashes (use the amount you need)

  • 1 cup jasmine Rice

  • 3 Spring onions, chopped

  • 1 chilli (chopped)

  • 200 g baby spinach

  • 2 tbsp butter

  • grated Cheese (just enough for the topping)

  • paprika (to taste)

Method

  • Cook the jasmin rice according to instructions on the packet, set aside.
  • Cut the gem squashes in halves, spoon out the seeds. Place the squashes in a microwave dish and cook for 10 minutes on high, or until the flesh is cooked.
  • When cooked place squashes in an ovenproof dish.
  • Melt the butter in a large skillet over medium heat until it stops bubbling. This allows the water from the butter to evaporate. Add the spinach and cook for about 5 minutes while stirring, until the leaves are darker and are about 14 of their original size.
  • Add the cooked rice to the spinach. Add the chopped chillies and spring onions. Mix well with two forks.
  • Add spoons full of this mixture to the squashes, top them up with grated cheese and sprinkle the paprika on each squash.
  • Grill in oven for about 5 minutes or until the cheese bubbles.
  • Serve as it is as a main meal or with any meat and salads.
