Do you love baking? How about baking for those brunch times with your friends and favoourite people? Pastries are often the answer and these mini strawberry shortcakes are the way to go. They almost look like scones but with a short pastry which is so buttery that it melts in your mouth with the creamy filling. The strawberries don’t just add colour, but that iconic sweet flavour is hard to miss.

Strawberry shortcakes tips

There are a few ways that you can present your shortcakes. Either bake and break them open like scones or put them into muffin tins. However, if you use muffin tins, weigh them down with rice or baking weights. You can sandwich them together with the filling or make beautiful open treats witht eh fresh strawberries on top. You can sprinkle them with icing sugar either way and enjoy the creamy filling and pastry just the same.

Ingredients

  • 250 g 250 self-raising flour

  • ½ tsp ½ salt

  • 90 g 90 butter

  • 30 g 30 castor sugar

  • 1 1 egg

  • 4 tbsp 4 milk

  • milk to glaze

  • For the filling
  • 250 ml 250 double cream

  • 1 tbsp 1 icing sugar, sieved

  • 250 g 250 strawberries, hulled

Method

  • Sift together flour and salt and rub in butter. Beat the egg with the milk. Add sugar and mix to a soft, but not sticky, dough with egg and milk.
  • Turn out on to a lightly floured table, knead quickly until smooth, then roll out to 1cm thickness. Cut into 6 rounds with a plain cutter.
  • Place on a greased baking tray and brush tops with milk.
  • Bake in a 200°C oven for 10-12 minutes.
  • Cool on a wire tray but, whilst still warm, split each shortcake in half by pulling carefully apart and not cutting with a knife.
  • To serve, slice strawberries keeping 6 whole for decoration.
  • Sandwich shortcakes together with cream and sliced strawberries.
  • Dust tops with icing-sugar and decorate serving plate with whole strawberries.
