Strawberry ice cream pie: A sweet treat that will become the new favourite

Enjoy something different this weekend with our strawberry ice cream pie. It’s sweet with a flaky crust and topped with fresh strawberries.

Strawberries are some of the world’s favourite fruits and is amazing with ice cream. Did you know that you can add some ice cream into a flaky pie crust for something new? Our strawberry ice cream pie will become the new event favourite when you bring it along to dinner parties and or a braai. You can turn it into one large or a couple of small individual pies for everybody.

Strawberry ice cream pie tips

You can either use puff pastry or short sheets from the shop as they are usually perfect. Use a muffin tin for small pies and a large dish if you want a big pie. There is of course no baking needed for the pie, but you will have to par-bake the pie crust. Make sure you weigh the pie crust down with something like rice while baking. Decorate with fresh strawberries and some icing sugar. However, add some meringue on top and give it a quick bake for a great upgrade.

Ingredients

  • 1 1 pie shell

  • 500 g 500 vanilla ice cream.

  • 1 packet 1 strawberry jelly

  • 1 cup 1 drained sliced strawberries

  • cups hot water.

  • fresh strawberries to finsih

Method

  • First make pie shell, using any desired pastry. Or any store-bought short or puff pastry.
  • Dissolve 1 packet of strawberry jelly in the hot water.
  • Spoon in the vanilla ice cream and stir until melted.
  • Place in fridge until thickened but not set.
  • Fold in the cup of strawberries.
  • Turn filling into the pie shell. Chill until firm.
