Have you ever had a steak at a restaurant and thought that you can make it better at home, or wandered if you could replicate the greatness you just got served? Either way, you need to try this steak fillet with gorgonzola sauce. Great steak dinners don’t actually need a whole lot of effort and this recipe provides the chance to surprise your family. You can choose to do the braai version or go fully, restaurant style and fry your steak in a pan.

Steak fillet and gorgonzola sauce tips

If you’re cooking fillet or rib-eye steak, a very hot cast-iron pan is the way to go to get the best sear and perfectly medium-rare meat on the inside. Gorgonzola is an Italian matured cheese similar to blue cheese which has a punchy flavour, so you don’t have to do too much with the steak its self. Serve your beautiful steak with some oven or air fryer roasted vegetables or stir-fried peppers and onions for the perfect dinner accompanied by a glass of wine.

Ingredients

  • 2 2 fillet steaks (21 or 28 day matured)

  • 1 teaspoon 1 butter

  • 1 1 shallot

  • 125 ml 125 sour cream

  • 80 g 80 Gorgonzola cheese

Method

  • Get the braai ready and then make the sauce.
  • For the sauce, all you need to do is finely chop the shallots and crumble the Gorgonzola into pieces.
  • Melt the butter in the pot.
  • Once melted, throw the shallots in and cook until tender (should take about two minutes).
  • Throw the sour cream and Gorgonzola into the mix and simmer for a few minutes until the cheese has melted, stirring continuously.
  • Once it’s melted, leave it to stand and go and get the steak ready for the braai.
  • For the steak on the braai
  • Make sure the coals are really hot and braai on high heat until it’s cooked the way you like it.
  • For the pan-seared steak
  • If you’re going to cook it in a pan, a cast-iron skillet is the best idea. Season your steak with salt and pepper, add the oil into the very hot pan and sear the steak on each side until it has a crust on both sides. Let the steak rest for at least half the time of cooking before slicing.
  • Now throw the sauce over it and enjoy!
