Spinach Salad with a Piquant Bacon Dressing

Bacon might be one of the best foods in the world. Anything is better with bacon, including breakfast, salads and even ice cream. This very simple piquant bacon and spinach salad is a great way to enjoy your greens with your dinner or lunch. Spinach with loads of iron and vitamin K goes great with the protein and fat from the bacon. You’ve got a crunchy salad that can be served hot or cold while you can get creative with what else you add to this tasty recipe.

Piquant bacon and spinach salad tips

When making the dressing, don’t forget to scrape off all of the bacon bits that stuck to the pan because that’s where much of the flavour is. You can make all kinds of salads with the same dressing, including chicken salads, classic green salads and couscous salad which will all be tastier thanks to some bacon crunch. The dressing is fresh and very versatile which you’ll definitely be making is more often, especially for a braai.

Piquant bacon and spinach salad recipe

Ingredients

  • large bunch fresh spinach 

  • 250 g 250 bacon

  • ½ cup ½ lime juice

  • black pepper

  • 2 tbsp 2 cider vinegar

  • 2 tbsp 2 butter

  • 2 tbsp 2 olive oil

  • thyme for garnishing

Method

  • Wash the spinach well, tear off the leaves and slice finely.
  • Place spinach in a large salad bowl, set aside.
  • Chop the bacon in small chunks.
  • In a small skillet, add the butter and oil and cook bacon over medium heat until crispy. Using a slotted spoon, remove the bacon and add to the spinach.
  • In the drippings of the bacon, add the cider vinegar and lime juice, heat through.
  • Sprinkle the warm bacon sauce onto the spinach salad, season with freshly ground pepper.
