Have you been looking for a fresh and light lunch that you can whip up in no-time? You can’t go wrong with a delicious salad. Every salad doesn’t need a large bed of leaves to rest on but this salad adds other great green ingredients. The Spicy Mushroom & Pork Salad gives you everything you need in one meal. Packed with protein, healthy fats and lots of other nutrients.

If you’re somebody who does food prep for the week, this recipe is perfect. You can make the pork balls ahead of time for each portion and freeze them in a glass container in the fridge for a few days. This recipe serves 4 portions and is great for family lunch on the weekends too. If you buy good lean pork, you get a fantastic boost of protein and adding avocado to the salad brings those “good fats” to the party. You can serve it hot or cold. The Spicy Mushroom & Pork Salad is an all-round bowl of joy.

Chef’s tip: For a variation make a stir-fry with peppers, courgettes, carrots, and cabbage to serve with the pork balls.

Ingredients

  • 250 g lean pork mince

  • 250 g button mushrooms, chopped and pan fried

  • ½ cup punnet mushrooms, sliced and pan fried

  • 2 spring onions, finely sliced

  • 1 chilli, finely chopped

  • 5 ml ground ginger

  • 5 ml lemon zest

  • 2 ml ground cumin

  • 20 ml sweet chilli sauce

  • 125 ml dried bread crumbs

  • 1 egg

  • 2 handfuls mixed salad leaves

  • ½ avocado, peeled and sliced

  • 1 chili, sliced

Method

  • In a bowl mix the lean pork mince, add the mushrooms, spring onions and chilli. Mix together and then add the ginger, zest, cumin, sweet chilli sauce, bread crumbs and egg. Season with salt and freshly ground pepper.
  • Roll into balls and place onto baking sheet, brush with oil and bake at 180 °C for 15 – 17 minutes.
  • Toss the rest of the ingredients together with the balls.

Notes
