When it’s cold outside and you’re hungry, the only thing that will help you feel better is a hearty meal. Some of the best comfort foods are all slow-cooked meaty meals with lots of sauce and bread or rice. Spicy chili con carne is one of those dishes as the warm food makes you feel better and a bit of chili also gets your temperature up. It’s a great meal to enjoy while under the covers and watching your favourite show.

Spicy chili con carne tips

Browning the beef with some oil before adding anything else helps caramelize it and add flavour. For the best results, do it in batches so that the meat doesn’t boil which can happen with beef that isn’t very lean. You can also use fresh chilies and garlic instead of flakes and powder. Chili con carne is usually served with rice but you can also serve it with some French baguette and a green salad.

Ingredients

  • 500 g 500 lean mince

  • 1 large 1 onion, chopped

  • 2 tsp 2 American chili powder

  • 1 tsp 1 salt

  • ½ tsp ½ garlic flakes

  • 1 tin 1 chopped tomatoes

  • 1 tin 1 red kidney beans

Method

  • Brown the mince with some oil in a hot pot. Remove the mince and fry the onions and add the meat back with chili powder and garlic flakes with salt.
  • Add tomatoes and bring to a boil. Reduce the heat to a simmer and cover for 1½-2 hours.
  • Add the beans and heat through.
  • Serve with rice or bread and a salad.
