As the days get warmer here in South Africa, we begin to plan out outside braais again. But a braai isn’t just about the amazing conversation, beverages and delicious meat on an open fire. A good bring and braai often includes delicious side dishes made by families who are going to join you. Why not surprise your friends and family with this fresh Spicy Butternut & Feta Salad. You’ll become the new salad person for the whole family after this.

When roasting the butternut squash to its golden perfection, make sure that the chunks aren’t too big. Nuts add a fantastic crunch to the party and who doesn’t love some feta cheese on top? Replace the usual lettuce for salad with baby spinach for extra flavour. The dressing made from chili, garlic, olive oil and lime juice gives the Spicy Butternut & Feta Salad its spice.

A light and healthy meal that fills you and satisfies your tummy. A simple and colourful dish ready in 60 minutes.

Ingredients

  • 1 butternut, peeled and cut into 2.5cm chunks

  • 1/2 cup extra virgin olive oil

  • salt and freshly ground black pepper

  • 1 teaspoons minced fresh hot chilli

  • 1 clove garlic, peeled

  • juice of 2 limes or one lemon

  • 3 cups baby spinach

  • 2 rounds of feta cheese, crumbled or cubed

  • 50 g nuts (hazel nuts, pecan nuts or walnuts), toasted

Method

  • Heat oven to 180°C. Place butternut on a large baking sheet in a single layer, drizzle with 2 tablespoons of the oil, stir to coat and sprinkle with salt and pepper.
  • Roast, turning occasionally, until the chunks begin to brown on corners and are soft inside, 30 to 40 minutes. Remove from the oven.
  • For the dressing: place chillies in a blender or mini food processor along with garlic, lime juice, remaining olive oil and a dash of salt and pepper. Process until blended.
  • In a large bowl, toss butternut with baby spinach, nuts and dressing.
  • Serve warm or at room temperature on a platter.
