Pasta has so many different forms and it is the quintessential Italian family dish. However, you don’t always want a meaty or dairy pasta, especially if you follow a vegan or vegetarian diet. Our spaghetti milanese with mushrooms is a veggie-forward recipe that’s ready in about 30-minutes. The word “milanese” mostly just refers to meals from northern Italy, named so by the Sicilians. It’s also a recipe you can play around with.

Spaghetti milanese with mushrooms tips

The recipe does have ham and butter but you can swap them out for your alternatives to make it more vegan or vegetarian. The mushrooms add the meaty texture and if cooked right, the pasta will also have a bit of texture. You can add other vegetables to the sauce like sliced baby marrow, carrots and even green peppers. To serve, present it in a big family-friendly serving dish in the middle of the table with lots of black pepper.

Ingredients

  • 300 g 300 spaghetti

  • salt and pepper

  • 30 g 30 butter

  • 1 1 onion

  • 30 g 30 plain flour

  • 500 ml 500 water

  • 2 g 2 tomato puree

  • 1 tsp 1 dried herbs

  • 180 g 180 ham

  • 150 g 150 mushrooms

Method

  • Cook the spaghetti in a large saucepan of salted, boiling water for 10 minutes or until soft. Drain and keep hot.
  • Melt butter in a large pan. Peel and finely chop onion and fry until transparent.
  • Add flour, mix well and cook for 2-3 minutes. Remove pan from heat and gradually add the water. Return to heat and add tomato puree and herbs. Bring to the boil, stirring all the time until thickened.
  • Chop ham roughly and add to sauce. Slice mushrooms and add to sauce. Season to taste. Cook gently for 5-10 minutes.
  • Put spaghetti in large serving dish, pour sauce over, toss and serve very hot.
