It’s still a bit cold and breezy during the windy August months in South Africa. The cold weather means that it’s still a great idea to enjoy your favourite comfort soups. Butternut Soup is a favourite around the world and is usually served as a starter, but it can also be your main meal. It’s warm, smooth and always delicious.

Butternut is packed with important nutrients and so are the tomatoes, and garlic in this recipe. Smooth Butternut Soup is easy to make and if you blend it enough, can be as smooth and creamy as you desire. Each serving is only 90 calories so you can enjoy it with your choice of healthy bread too. If you want a classic spicy taste to your butternut soup, try a pinch of dried chilli flakes to give it a little kick.

Ingredients

  • 340 g 340 Chopped butternut

  • 1 medium 1 Chopped onion

  • 4 cloves 4 Crushed garlic

  • 300 g 300 Tomatoes

  • 2 tsp 2 Dried Italian herbs

  • 2 tsp 2 Extra virgin olive oil

  • 1 pinch 1 Salt

  • 1 pinch 1 Pepper

  • 500 ml 500 Water

Method

  • In a large pot add the olive oil and saute the garlic and onions until golden brown.
  • Chop up the butternut and tomatoes into small pieces and add to the large pot.
  • Add the Italian herbs, salt and pepper to spice.
  • Add the water until all the vegetables are covered and cook until soft.
  • Blend together and serve.
