Smoky popcorn mushrooms: A different kind of movie snack

We all love snacks with movies or as we get a bit bored and walk into the kitchen. Popcorn is often a snack you grab but we can make it even better. For your next movie night, game day or when you just want a great family snack with the kids, make these smoky popcorn mushrooms. These savoury treats have a soft interior and a crunchy exterior with flavours that remind you that you’re a real South African, thanks to the biltong dust.

Mushrooms are a powerful source of vitamin D, proteins, and carbohydrates. So, they are an excellent food choice for children to ensure they get those important vitamins and minerals in their diet, especially when they’re picky eaters. It only takes about twenty minutes and you can make them in batches so that everybody can enjoy them while they’re nice and warm. They’re of course great for lunchboxes too, whether you’re going to school or work.

Ingredients

  • 300 g 300 baby button mushrooms

  • ½ cup ½ Panko bread crumbs

  • ½ cup ½ biltong dust

  • 1 cup 1 plain popcorn

  • 1 tbsp 1 chilli flakes

  • ½ ½ lemon, zested

  • 1 tbsp 1 sesame seeds

  • 2 tbsp 2 hoisin sauce

  • 2 tbsp 2 soy sauce

  • olive oil for frying

Method

  • Blitz the popcorn in a food processor until you’ve made chunky crumbs.
  • Mix the panko, popcorn crumbs, biltong dust, chilli flakes, sesame seeds and lemon zest in a large mixing bowl and set aside.
  • In a non-stick frying pan add a drizzle of olive oil and sauté the mushrooms until they release their water and begin to brown. Add the soy sauce and hoisin and roll them around to glaze each one. Allow the sauce to reduce and become sticky.
  • Toss the glazed mushrooms in the popcorn mix making sure each one is well coated.
  • Serve as a snack in jars or cones at a party or while watching your favourite tv show.
