Oh ice cream, you might not quench our thirst on hot days but you make us feel refreshed and happy. There’s nothing like that smooth bit of sweetness in a cone, cup or bowl on a hot day or night. However, you probably love coffee too and it’s easier to combine them than you think. All you need for this simple coffee ice cream recipe is four ingredients and your favourite toppings.

Simple coffee ice cream tips

You might not be making a custard or need an ice cream churning machine but you’ll be whisking a lot. You want the egg whites to be as stiff as possible and add the rest of the ingredients very slowly. It’s all about the toppings and crushed nuts are a great way to start. You can also have crushed coffee beans or chocolate chips in the mixture before freezing and use them as garnish. For a real treat, top it with baked meringue.

Ingredients

  • 2 2 eggs, separated

  • 60 g 60 icing sugar, sieved

  • 2 tbsp 2 coffee essence

  • 750 ml 750 double cream

Method

  • Whisk egg whites until very stiff, then gradually whisk in icing sugar.
  • Whisk egg yolks and coffee essence together and gradually add into egg whites.
  • Lightly whip cream and, add coffee mixture.
  • Pour into ice cube tray or shallow tin and freeze. This ice cream does not need any further beating.
  • To vary, fold in with the cream 50g finely chopped walnuts,  lightly crushed meringue, or crushed macaroons.
