Scrumptious Sago ‘Melkkos’ or Milk Food, if you will

We’ve been looking at some well-known South African dishes this week and this is yet another one of them that are an absolute must try!

When you taste just one spoonful, you are hooked for life. ‘Melkkos’ is pure nostalgia and will remind you of your childhood days or boarding school days. I remember the first time I had this and it was in my granny’s kitchen where I accidentally spilt glitter in the pot whilst she was busy making it. She was not a very happy granny that day, but our food sparkled and it brightened up my day.

What we love about this meal is that it is delicious but better yet, it is not expensive to make. Have it with cinnamon sugar or sweetener if you are a diabetic

A traditional South African meal that is easy to make and doesn’t take too long.

Ingredients

  • 250 ml 250 Sago /185 g

  • 2.5 litres milk (Full cream)

  • 2 eggs

  • 60 ml 60 of water

  • 30 ml 30 custard powder

  • 30 ml 30 flour

  • 2 ml 2 (½ tsp) salt

  • 25 g 25 (30ml) butter

  • Cinnamon sugar

Method

  • Heat the mixture in a large heavy-based saucepan and bring to a boil, stirring it all the time with a whisk or wooden spoon.
  • Separate the eggs. Beat the egg yolks, water, custard powder, flour and salt together until a smooth paste.
  • Carefully add some of the warm milk and sago to the egg mixture to warm it up, mix this into the sago and milk mixture. Cook until it thickens.
  • Stir in the butter.
  • Beat the egg whites until stiff and fold in the Melkkos mixture. Keep it light and fluffy.
