Winter is still in full-swing in South Africa and what you need is a bowl of tasty soup. The best soups have some root vegetables, some leafy vegetable and a hearty bunch of meat. All of these ingredients are healthy with nutrients like vitamins and minerals from both the meat and vegetables. the meat also adds some great flavour and protein to the mix. Scotch broth the one soup that the whole family can enjoy.

Scotch broth tips

Browning the meat and bones adds colour which turns into lovely flavour that will deepen the flavour of the broth. If your pot is tall but not too wide, brown the pieces in batches. When adding the water or chicken stock, scrape the amazing bits off the bottom of the pot. Try and get some meaty bones with marrow which will also ad flavour. Add a teaspoon or two chili flakes for a kick that isn’t spicy but lifts the flavour. Serve with some fresh bread.

Ingredients

  • soup meat and/or bones

  • carrots

  • 2 litres 2 water or high-quality chicken stock.

  • turnips

  • ½ cup ½ barley

  • 1 small 1 cabbage

  • 2 2 leeks

  • Salt and blackpepper

  • 3 cloves 3 garlic

Method

  • Brown the meat in a large soup pot.
  • Slowly add the water and barley.
  • Wash and chop leeks, galric, turnips, carrots and cabbage. Add them to the pot with the meat and water.
  • Simmer for at least 2 hours at medium heat.
