We all want a healthy breakfast to start our day and having enough protein is the best way to go. Also, you want to make cooking as easy as possible to save time and baked eggs are surprisingly easy to make. These salami and egg muffins are tasty and perfect for those cutting carbs or staying on a keto diet. You can also make a whole lot of these for large breakfast or brunch parties with friends and family.

Salami and egg muffins suggestions

If you don’t have salami, you can use bacon or ham to form your cups. Add some spice to the party with some paprika or cayenne pepper or change your cheese from mozzarella to cheddar or gouda. Make sure that when using bacon or ham that you adjust the seasoning so that your eggs are perfect and not over- or under-seasoned. If you want to make these muffins more decadent, make some of your own Hollandaise sauce.

Ingredients

  • 6 6 eggs

  • 12 slices 12 salami

  • 1⁄2 cup 1⁄2 grated cheese, mozzarella or cheddar

  • salt and pepper to taste

Method

  • Preheat your oven to 160°C.
  • Spray and cook or grease your muffin pan. A silicon or non-stick muffin pan works best and is much easier to clean.
  • Line muffin cups with two slices of salami – overlap the two pieces slightly to form a basket for the egg.
  • Add some mozzarella cheese to each “basket”.
  • Crack in an egg and season with salt and pepper.
  • Bake in preheated oven for 20mins or until cooked to your liking.
