When you are hosting lots of friends this weekend, you need to give them snacks and starters before the braai even gets lit. These roasted cheesy stuffed mushrooms are going to be a real crowd-pleaser. With this simple recipe, you’ll have a meaty mushroom topped with garlic and cheese, so what’s not to love, right? One of the best parts of this recipe is that you’ll have them ready in under twenty minutes and you can still get creative what you put on top of them.

Roasted cheesy stuffed mushrooms tips

Mushrooms don’t need to be flipped to cook on all sides, so they stay in their shapes, even if they do shrink, so you’ll need to make enough of them. The garlic and cheese will remind you of your faovurite garlic bread and the paprika adds that smokey kick to each bite. You can add some sweetness to the party with some chutney too which is an ingredient we already love. The bigger the mushrooms, the better in this case and watch them disappear.

Roasted cheesy stuffed mushrooms recipe

  • 6 6 brown mushrooms

  • 2 tbsp 2 crushed garlic

  • 6 6 spring onions, chopped 

  • 1 tbsp 1 thinly chopped fresh parsley

  • 60 g 60 grated cheddar or mozzarella cheese

  • parsley for garnishing

  • garlic squeezed dipping sauce (optional)

  • coarsely ground salt and black pepper

  • 2 tbsp 2 butter

  • smoked Spanish paprika

  • 1 1 lemon, sliced


  • Preheat the oven to 220°C.
  • Wash the mushrooms, take out the stems and chop very fine, add to a mixing bowl.
  • Add to the mushroom stems, the butter, garlic, ¾ of the cheese and spring onions. Mix well.
  • Add salt and pepper to taste.
  • Prepare a baking tray with baking paper. 
  • Spread the mushrooms on a baking tray and roast in preheated oven for 10 minutes, do not toss or turn.
  • Remove from the oven and sprinkle with remaining cheese and paprika. Change the setting to grill.
  • Put the oven tray back in the oven under the grill for about 1 to 2 minutes.
  • Remove from oven and allow to cool slightly.
  • Just before serving, squeeze over a bit of lemon juice and garnish with parsley.
  • Serve mushrooms drizzled with pan juices.
