When it’s time to make your favourite foods, we all enjoy a good roast. A beautiful piece of roasted beef, pork, lamb or chicken is a great way to share something great but a good side is always welcome. Roasted vegetables are a great way to enjoy something tasty and healthy alongside the feast you’re cooking for your family. Our Italian-style roasted mushrooms and veggies will become a brand new favourite dinner side.

Roasted mushrooms and veggies tips

Mushrooms are a very versatile ingredient and when roasted, are at their best. The cherry tomatoes add some great sweetness to the dish and it also makes cauliflower interesting. You can also add some of your favourite vegetables like thin slices of sweet potato, fennel or even some broccoli to keep it interesting. The options to create something incredibly tasty is endless and you can also try this recipe in your air fryer in half the time too.

Ingredients

  • 2-3 cups 2-3 mushrooms (cleaned)

  • 2 cups 2 cauliflower (cut into small florets)

  • 2 cups 2 cocktail tomatoes

  • 12 cloves 12 garlic (peeled)

  • 2 tbsp 2 olive oil

  • 1 tbsp 1 Italian seasoning

  • 1 tbsp 1 fresh parsley (chopped)

  • salt and pepper to taste

Method

  • Preheat oven to 180°C.
  • In a bowl add all the mushrooms and veggies. Drizzle with olive oil then add Italian seasoning, salt, pepper and toss until well combined.
  • Dump the veggies to a baking sheet and place in the preheat oven. Roast for 20 to 30 minutes or until mushrooms are golden brown and cauliflower is fork tender.
  • ·        Garnish with fresh parsley before serving.
