Reverse sear air fryer steak: An alternative to sous vide cooking

When it’s steak night, you won’t want to go to a fancy restaurant ever again after trying this reverse sear air fryer steak. In some high-end restaurants, they use a sous vide cooking method to slow cook the steak before giving it that beautiful brown sear and flavour on the outside. However, not all of us have the ability to cook this way and we bet you didn’t know that you could do it with an air fryer too. Reverse sear air fryer steak tips

Reverse searing just means that you’ll be adding the brown crust on the outside after most of the cooking is done. This steak in the recipe is very thick but you can still adjust cooking times with what you’ve got on hand. A steak is ready when the internal temp is about 60°C and you’ll know it’s done in the air fryer. When searing, the steak will tell you when it’s done when it’s no longer sticking to the pan and you can flip it. When flipped, add a few tablespoons of butter, a clove of crushed garlic and rosemary and baste the steak until it’s ready before letting it rest for 5-8 minutes.

Ingredients

  • 700g ribeye at room temperature (thickness 13mm)

  • 1 tbsp 1 olive oil

  • salt and freshly ground black pepper

Method

  • Bring the steak to room temperature and pat dry with kitchen towel.
  • Put your steak into your air fryer. Set your temp for 82°C.
  • Set your timer for 50 min (if your steak is thinner, reduce time to 40 min. If you like a
    medium rare, then also reduce to 40 min). Once time has elapsed remove from air fryer.
  • Get a pan, searingly hot. Place your steak into the pan. Leave it for 2-3 min until it forms a crust. Flip it. Cook for another 2 min. 
  • Optional: brush with basting sauce or finish with a knob of garlic butter. Let it rest for 8 min and then slice.
  • Sprinkle with flakes of sea salt.
