Preparing a snack table and wondering what dip you can add? Think no further than this red pepper hummus. It is loaded with flavour and taste and will satisfy every palate.

Hummus originated in the Middle East. It is a dip made from cooked, mashed chickpeas blended with a variety of ingredients including lemon juice, and garlic. Although there is a lot of variations on this delicacy, it usually also includes olive oil. To add some specific flavour, you can add any other ingredient you feel will work well, like the chargrilled red pepper in the case of this recipe.

Red pepper hummus can be enjoyed as a dipping sauce for crunchy veggies, or you can eat it with pita bread, as is tradition in the Middle East. Red pepper hummus is high in fiber and protein among other important nutrients. It includes unsaturated fat, antioxidants, magnesium, potassium, and iron. So much more reason to enjoy this tasty dip!

Ingredients

  • 400 can 400 can chickpeas, rinsed and drained

  • 2 tablespoons 2 fresh lemon juice

  • 2 tablespoons 2 olive oil

  • 1 1 red chilli, chopped

  • 1 clove 1 garlic, crushed

  • 260 jar 260 jar chargrilled red pepper, drained

  • toasted pine nuts

Method

  • Place the chickpeas, lemon juice, oil, chilli, garlic and red pepper in a food processor. Process until combined.
  • Season to your liking.
  • Place in a serving bowl and sprinkle with pine nuts.
  • Enjoy with raw vegetables or toasted pita bread.
