  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 2 medium garlic cloves, minced

  • 1 tablespoon fresh ginger, minced

  • 1 small red chili, minced

  • 2 teaspoons curry powder

  • 2 teaspoons ground turmeric

  • 1 teaspoon ground cumin

  • 1 teaspoon salt

  • ½ cup milk, low fat

  • 2 cups water

  • 1 cup red lentils, dry

  • 5 cups baby spinach


  • Heat the oil in a large pot over medium heat. Sauté the onion until soft (about 5 minutes).
  • Add the garlic, ginger, chilli, cumin, turmeric, salt and curry powder. Cook until very fragrant (about 2 minutes).
  • Add the milk, lentils and water. Bring to a boil over high heat.
  • Cook until the lentils are tender, 25-35 minutes, stirring occasionally to prevent the lentils from sticking to the bottom of the pan.
  • Fold in the spinach and cook until wilted (about 3 minutes).
  • Serve with or without rice.
