Nobody wants to spend all night cooking and there are very tasty ways to use both fresh produce and some leftovers. If you’ve got leftover rice, a great way to utilize it is with fried rice. This spicy prawn and pineapple fried rice recipe is read in just a few minutes and packs a big flavour punch with every bite.

Not only is this recipe quick, but it’s very healthy. With peppers and other vegetables, you’ve got a colourful plate of food with a great protein source from the prawns. Using leftover rice helps the sauce absorb more effectively and if you feel the flavour, turn it into egg-fried rice as well.
