If you are somebody who understands that you should use every bit of produce you can, you might enjoy tripe stew. In South Africa, beef tripe stew is also known as mala mogodu. This classic African meal is enjoyed regularly all over and even though it isn’t for everybody, still tastes fantastic.

There are a few types you would be looking for when at your local butcher. Beef tripe is made from the muscle wall (the interior mucosal lining is removed) of a cow’s stomach chambers: the rumen (blanket/flat/smooth tripe), the reticulum(honeycomb and pocket tripe), and the omasum (book/bible/leaf tripe). It’s almost like the South African version of haggis.
