Traditional South African chicken potjiekos
Not every weekend needs to be a braai but you can still cook on the coals. Potjiekos, also known as “small pot food” is a traditional South African stew cooked on the fire in a 3-legged cast iron pot. This simple chicken potjiekos recipe is tender and rich with lots of chunky vegetables.
Chicken potjie doesn’t need hours to cook and the recipe below only takes about 90-minutes. The vegetables are nice and chunky while you only use dark meat from the chicken which stays tender and won’t dry out. Remember, layer, don’t stir and enjoy every bite. Serve with some fluffy rice or samp.
