Recipe of the Day: Bokkoms – Fish biltong [Video]. Image by leliaquealcua38 from Pixabay
For centuries, people have been curing meat and fish for harsh weather and long journeys and some of those traditions still linger. Bokkoms, a Dutch style of curing and drying fish is still very popular along the South African western coast.
This salted fish is dried in the sun and wind and is eaten after peeling off the skin. In some cases it is also smoked. It is sometimes referred to as “fish biltong“. There are many other fish used too like yellowtail, snoek and even sardines.
