Durban is famous for so many curry dishes: Bunny chow, mutton curry and prawn curry are just a few, and there are heaps of fragrant and spicy variations.

This prawn curry recipe is one which is easy to make and yet full of flavour. Spicy, fragrant, fresh and flavourful this curry has truly got everything going for fans of Indian food.

You can adapt the amount to chillies to suit your palate. To make an even milder curry, add a tin of coconut milk. This will give a creamy taste and take the heat level down a notch.

Serve with rice of your choice – basmati in particular is delicious with this curry. You can also add a roti or naan bread, and you have a gourmet home-cooked meal.

This prawn curry recipe is easy to make and yet full of flavour. You won’t be dissapointed!

Ingredients

  • 1 kg 1 prawn meat

  • 1 tablespoon 1 butter

  • 3 tablespoons 3 oil

  • 1 1 onion, finely chopped

  • 4 4 cloves garlic, crushed

  • 3 3 bay leaves

  • salt to taste

  • 1 teaspoon 1 cumin seeds

  • 1 teaspoon 1 coriander seeds, ground

  • 2 teaspoon 2 garam masala

  • 5 large 5 tomatoes, grated or finely chopped OR 1 tin tomatoes

  • 1 teaspoon 1 ginger, fresh or ground

  • 1 teaspoon 1 tumeric

  • 2 teaspoon 2 chilli powder

  • 4 4 fresh curry leaves

  • 2 tablespoons 2 brown sugar

  • fresh coriander

  • green chillies (to taste)

Method

  • Heat butter and oil in a pot.
  • Saute the onions, garlic, bay leaves, cumin and coriander, garam masala until onions are soft, about three minutes.
  • Add the tomatoes, tumeric, ginger, curry leaves and chilli powder. Season with salt and pepper.
  • Add the brown sugar.
  • Simmer for about 20 minutes.
  • Add prawns, stir and let simmer for about 8 minutes.
  • Garnish with fresh coriander and desired amount of green chillis.
  • Serve with rice, roti or naan bread.
