Cake has been around for a very long time and they’re often shared with the humble public as well as royalty. In the modern age, we have more delicious desserts than we could ask for but sometimes, going the simple and old-school route is a great option. This easy pound cake recipe is one of the simplest cake recipes you’ll ever make and the fun starts when you get creative with it. It’s great for tea time and Sunday lunch dessert.

Easy pound cake suggestions

Pound cake is a type of cake traditionally made with a pound (450g) of each of four ingredients: flour, butter, eggs, and sugar. It can also be baked in a round or square cake tin as well as a bread tin. This recipe has a zesty lemon element with the vanilla essence which keep to the classic light flavours. You can add layers of caramel treat and cream cheese frosting and make pretty shapes with that frosting if you do choose to use it along with some pretty decorations.

Ingredients

  • 1 cup 1 butter

  • 1 cup 1 sugar

  • 1 cup 1 self raising flour

  • 4 4 eggs

  • 1 tsp 1 vanilla essence

  • 1 small 1 lemon

Method

  • Preheat oven to 180°C.
  • Cream the butter and sugar together. 
  •  Add the eggs one by one.
  • Add the flour and vanilla essence. Do not over mix.
  • Pour into a cake baking tin or pyrex dish. Bake for 20 minutes.
  • Squeeze the fresh lemon juice over the hot cake.
  • When the cake is cooled, sprinkle with icing sugar powder.

Notes

  • To treat yourself, add a dollop of caramel.
