Potjiekos – Tasty one-pot South African meal for the family

If there is one meal loved by the majority of South Africans, it is potjiekos. This easy, flavour-packed one-pot meal is a must-have at least once a month if you have the time to cook it. Usually, depending on the type of meat you use in your potjiekos, you need to exercise patience when cooking this much-loved meal.

This potjiekos recipe uses cubed beef which will cook fairly quickly so it will not take as much time as for example as an oxtail potjie. The secret to getting your one-pot food just perfect is to allow the flavours to properly mix and infuse for the ultimate taste experience. The best part of this dish is that it includes a great variety of veggies making this a meal loaded with goodness.

This recipe serves eight people, so if you do not have a large family this is the perfect opportunity to invite some friends or neighbours over for a bite. Serve this potjiekos on a bed of fluffy rice or tender cooked samp.

  • 50 g 50 butter

  • 1 1 onion, chopped

  • 1.5 kg 1.5 beef cubes

  • 5 5 potatoes, chopped

  • 120 g 120 tomato paste

  • 5 5 carrots, cut in circles

  • 150 g 150 cauliflower

  • 150 g 150 broccoli

  • 150 g 150 peas

  • 1 handful 1 rosemary

  • 80 g 80 mixed herbs

  • 4 4 bay leaves

  • 1 litre 1 vegetable stock

  • 10 ml 10 salt

  • 10 ml 10 black pepper

  • 1 handful 1 fresh parsley


  • Place a pot on heat and add the butter and fry the onions and add beef with salt and pepper until brown.
  • Add the tomato paste and let it simmer for 5 minutes and add the carrots, mixed herbs, potatoes, broccoli cauliflower, peas, green beans, bay leaves, rosemary and vegetable stock.
  • Allow the vegetables and meat to simmer until cooked and tender for 1 hour 45 minutes.
  • Garnish with fresh parsley and serve with rice or samp.
