When it comes to family dinners, pasta goes a long way. You can throw together some of your favourite ingredients and go crazy with flavour. As some chefs say, where there is fat, there is flavour, and pork embodies that sentiment. Our pork and tomato pasta uses some quick-fried pork belly with a simple tomato sauce to make something great with your favourite pasta, like spaghetti. It’s a hearty weeknight meal for everybody.

Pork and tomato pasta tips

One of the best ways to cook the pork belly strips is to use a wok or a very hot saucepan. You can also use pork chops which can have a bit more meat on them if that’s your taste. You can also get creative by using pork mince and making something similar to a bolognese sauce. When using pork belly ar chops however, you have crunchy rendered fat to enjoy with every bite. Serve with freshly grated parmesan cheese.

Ingredients

  • 350 g 350 spaghetti

  • pork drippings

  • 200 g 200 pork belly

  • 1 1 onion

  • 2 cloves 2 garlic

  • 225 g 225 tomatoes, skinned

  • 120 g 120 grated Parmesan cheese

Method

  • Cook the spaghetti in a large saucepan of salted, boiling water for 12 minutes or until tender. Drain and keep hot in a large serving dish.
  • Meanwhile make the sauce. Melt dripping and fry finely chopped onion for a few minutes. Cut pork into tiny strips and fry until browned.
  • Cut tomatoes into rough· pieces and add to pan. Season well. Cook 10 minutes, stirring to break up the tomatoes.
  • Pour sauce over the spaghetti and serve immediately. Grate and add cheese separately.
