When you get home from a long day, you want a simple dinner, don’t you? You don’t want to go to the shops too much and just want to use what you have at home. This pork and mushrooms recipe is great with anything you have in the pantry. It’s also easy to put together so that you can enjoy your meal and spend your evening with the ones you care about as you watch TV with a full belly.

Pork and mushrooms tips

You can use pork fillet or chops for this recipe and the extra fat in the chops might add a bit of richness. If you’re not a fan of peas as a side, try making some sweet peppers. Thinly slice red peppers and onions, saute them in a pan and as you turn it down, add some sugar and red wine vinegar.. It will simmer for 10 to 15 minutes before it’s ready. Experiment with this recipe as much as you want to.

Ingredients

  • Pork fillet or chops cut into cubes

  • 1 tbsp 1 flour

  • 3 tbsp 3 butter

  • 125 ml 125 chicken stock

  • 1 drsp 1 sherry

  • salt and freshly ground black pepper

  • 1 small 1 onion

  • ½ cup ½ mushrooms

  • To serve
  • 1 cup 1 frozen peas

  • butter

Method

  • Coat the meat with flour, salt and pepper.
  • In a saucepan with some oil, seer the pork and then add the butter and onions. Fry until browned.
  • Gradually add the stock and combine until a low simmer. Simmer for 30 minutes.
  • Add the mushrooms and simmer for an additional 10 minutes.
  • Add the sherry and cook for another 5 minutes.
  • In a separate pan, fry the peas with some butter and salt.
  • Serve while warm.
